This Date cookie recipe using chopped dates can be made in a very simple method ,just like how we make a chocolate chip cookies.Cream the butter and sugar.I have used a whisk to cream them together Add egg ,vanilla extract and coffee powder and mix until if forms a thick and uniform mixture.
Add the flour, baking powder and salt. Now for convenience,I switched from using a whisk on to a spatula.Combine them all together.Take care not to overmix the batter. Just when the batter come together, add the chopped dates and mix to form a homogenous date cookie dough.Once the dough is ready, take small portions (1 tablespoon scoop dough) using a spoon or an ice-cream scoop and place it onto the baking tray lined with a parchment paper or onto a non stick baking tray.Leave a little room(1 inch space) between each ball of date cookie dough, as they will spread a little while bake. Place the cookie sheet onto a 350 F preheated oven in the middle rack.Bake for 16-18 minutes. Transfer them onto a cooloing rack. The date cookies will be soft when they are out of the oven.Wait to cool down down and become firm. Enkoy delicious date cookies with a cup of creamy coffee or with a glass of cold milk.
