Coffee Flan Recipe (Coffee Crème Caramel)

For the Caramel:
- 75 g granulated sugar or 6 tbsp
- 80 ml water or ⅓ cup
For the Coffee Custard:
- 4 large eggs
- 100 g granulated sugar or ½ cup
- 500 ml milk or 2 cups
- 3 g vanilla extract or vanilla sugar or 1 tsp
- Pinch of salt optional
- 4 g instant coffee powder or ½ tbsp
Prepare the caramel.
Add the sugar and water to a saucepan. Heat over medium-high heat until the sugar dissolves and turns a deep golden amber color.
Immediately pour the caramel into a flan mold or baking dish. Swirl to coat the bottom evenly. Set aside to cool and harden.
Prepare the custard
Dissolve the instant coffee powder in about 2 tablespoons of milk taken from the total amount of milk.
In a large bowl, whisk together the eggs, sugar, and vanilla until combined. Avoid incorporating too much air.
Add the coffee mixture and remaining milk. Whisk gently until combined.
Strain the custard mixture through a fine-mesh sieve for a silky smooth texture.
Pour the custard over the hardened caramel.
Place the mold inside a larger baking pan. Fill the outer pan with hot water until it reaches halfway up the sides of the mold.
Notes
- Make sure the custard mix is well blended and smooth.
- If any froth forms, let the mixture rest until the bubbles subside before pouring it into the mold.
- Straining the custard helps create an ultra-smooth texture.
- Do not overbake, as this can make the custard grainy.
- For a stronger coffee flavor, use espresso powder instead of instant coffee.
- Coffee flan tastes even better the next day.
