Ingredients

For the Fritters

  • 2 apples 250 g, peeled and finely diced
  • 125 g all-purpose flour 1 ¾ cup
  • 100 g sugar ½ cup
  • 100 g butter cubed and pliable
  • 8 g baking powder 2 teaspoon
  • 1 g salt ⅛ teaspoon
  • 2 g vanilla sugar ½ teaspoon
  • 1.5 g ground cinnamon ½ teaspoon
  • 2 eggs lightly beaten
  • 75 ml milk 5 tablespoon

For Topping

  • 25 g Sliced almonds ¼ cup25
  • 15 g Powdered sugar 2 tbsp

Instructions

  • Prepare the oven: Preheat the oven to 190°C (375°F). Line a baking tray with parchment paper.
  • Combine the dry ingredients:In a large bowl, mix the flour, sugar, baking powder, vanilla sugar, cinnamon, and salt.
  • Rub in the butter: Add the cubed butter. Using your fingertips, rub it into the flour mixture until it resembles coarse breadcrumbs. The butter should be pliable, not too cold or soft.
  • Mix the wet ingredients: Lightly beat the eggs and add the milk. Mix well.
  • Make the dough: Add the diced apples and egg mixture to the flour mixture. Gently mix until a thick, sticky dough forms. Do not overmix.
  • Shape: Scoop about 2 tablespoons of dough per fritter onto the prepared baking tray. You should get about 9–10 fritters. Leave some space between them.
  • Add almonds: Sprinkle sliced almonds generously over the tops.
  • Bake: Bake for about 25 minutes, or until lightly golden and cooked through. Baking time may vary depending on the size of the fritters.
  • Finish: Let the fritters cool slightly. Dust generously with powdered sugar. For a fresh, bright finish, squeeze a little lemon juice over the top and add another light dusting of powdered sugar.

Notes

Use firm, crisp apples for the best texture.
Cut the apples into small pieces so they distribute evenly through the dough.
Don't overmix the dough, as this can make the fritters dense.
The butter should be pliable but not melted.
The fritters are best served slightly cooled but still warm, when the apples are juicy and the almonds are still crunchy.
