Easy Moroccan Khobz Recipe (No-Knead Method)

Moroccan Khobz is a traditional round bread that is served with almost every meal in Morocco. It has a beautiful golden crust, a soft and chewy interior, and a wonderful aroma that fills the kitchen as it bakes.

Unlike sandwich bread, Khobz is usually shaped into flat round loaves that are perfect for tearing apart and serving alongside soups, stews, tagines, salads, and dips.

This easy no-knead Moroccan Khobz recipe is one of my favorite homemade breads because it requires very little effort. There is no long kneading session, no special equipment, and no complicated techniques.

Simply mix the ingredients, let the dough rest, shape it, and bake. The result is delicious homemade bread with a slightly nutty flavor from the whole wheat flour and a wonderful texture that pairs beautifully with both savory and sweet dishes.

The best part is that you can customize each loaf with different toppings. Sesame seeds, wheat bran, semolina, or coarse flour all add their own unique flavor and texture. My personal favorite is the sesame-coated version because the aroma of toasted sesame seeds is simply irresistible.

Mix everything together until no dry flour remains. The dough will look rough and shaggy, which is perfectly normal.

Cover the bowl and let the dough rest for 30 minutes.

Step 2: Divide the Dough

After the resting period, the dough will be much smoother and easier to handle.

Gather the dough into a smooth round ball. Use sesame seeds or semolina or coarse flour to prevent the dough from sticking to the surface.

Divide it into four equal portions and shape each portion into a ball.

Cover the dough balls with a kitchen towel and let them rest for 10 to 12 minutes.

Step 3: Final Shaping

Flatten each dough ball into a round disc of approximately ¼ inch thick.

To prevent sticking and add extra flavor, coat the surface lightly with semolina or wheat bran, sesame seeds or coarse flour.

Place the shaped discs on a clean cloth dusted generously with flour so the dough does not stick.

Cover and allow the loaves to rise for 45 minutes to 1 hour, or until they look noticeably puffy.

Step 4: Dock the Dough

Before baking, use a fork or the end of a spoon to poke small hole in the center or holes across the surface of each loaf.

This helps prevent the bread from puffing excessively during baking and helps maintain the traditional Khobz shape.

Step 5: Bake

Place the baking stone or baking sheet( I placed my half sheet pan upside down) into the oven.

Preheat your oven to 425°F (220°C).

Transfer the Risen Dough discs onto a pizza peel lined with parchment paper.

Carefully transfer the dough discs onto the preheated baking pan.

Bake the Moroccan Khobz for 16 to 18 minutes, or until golden brown.

What Does Moroccan Khobz Taste Like?

Moroccan Khobz has a flavor that is richer and more complex than ordinary white bread.

The whole wheat flour adds a subtle nutty flavor and aroma, while the toppings contribute their own unique character.

Semolina creates a pleasant texture on the crust.

Wheat bran adds an earthy flavor and rustic appearance.

Sesame seeds provide a rich toasted aroma and slightly nutty taste.

Each variation has its own personality, but the sesame version is my favorite. The smell of freshly toasted sesame seeds combined with warm homemade bread is simply amazing.

How to Serve Moroccan Khobz

Khobz is incredibly versatile and can be served in many ways.

With Moroccan Meals

Traditionally, Khobz is served alongside:

  • Moroccan tagines
  • Lentil soup
  • Harira soup
  • Vegetable stews
  • Grilled meats
  • Roasted vegetables

The bread is often used to scoop up food instead of using utensils.

With Olive Oil

One of the simplest and most delicious ways to enjoy Khobz is with good-quality olive oil.

Tear off a piece of warm bread and dip it into olive oil for a simple and satisfying snack.

With Butter and Honey

Warm Khobz spread with butter and drizzled with honey makes a wonderful breakfast or afternoon treat.

With Cheese

Serve slices of Khobz alongside soft cheese, feta, cream cheese, or labneh.

For Sandwiches

Although traditionally served as a table bread, Khobz can also be sliced and used for sandwiches.

Fill it with grilled chicken, roasted vegetables, cheese, or falafel for a delicious lunch.

Variations

One of the things I love most about this recipe is how easy it is to customize.

Sesame Khobz

Press sesame seeds onto the surface before the final rise.

This version has an incredible aroma and beautiful golden appearance.

Wheat Bran Khobz

Coat the dough with wheat bran for a rustic look and extra fiber.

Semolina Khobz

Dust the loaves with semolina for added texture and a slightly crunchy crust.

Honey Khobz

Replace the sugar with honey for a subtle sweetness and deeper flavor.

Larger Family Loaf

Instead of dividing the dough into four smaller breads, shape it into one large traditional loaf. The baking time may need to be increased slightly.

Herb Khobz

Mix dried herbs such as thyme, oregano, or rosemary into the dough for extra flavor.

Tips for Success

Don't Add Too Much Flour

The dough should feel soft. Adding too much flour can make the bread dense.

Let the Dough Rest

The initial 30-minute rest helps hydrate the flour and improves the dough texture without kneading.

Use a Hot Oven

A properly preheated oven helps create a beautiful crust.

Dock Before Baking

Poking holes in the dough prevents excessive puffing and creates the classic Khobz appearance.

Experiment with Toppings

Try making all four loaves differently. Use sesame seeds on one, wheat bran on another, semolina on the third, and coarse flour on the fourth.

This is a fun way to discover your favorite version.

Storage Instructions

Moroccan Khobz is best enjoyed on the day it is baked, but it stores well for several days.

Room Temperature

Allow the bread to cool completely.

Store it in an airtight container or bread bag at room temperature for up to 2 days.

Refrigerator

Although refrigeration can dry bread slightly, Khobz can be stored in the refrigerator for up to 5 days.

Wrap it well to prevent it from drying out.

Freezer

Khobz freezes very well.

Allow the bread to cool completely and place it in a freezer-safe bag or container.

Freeze for up to 3 months.

For convenience, you can freeze individual loaves separately.

Reheating Instructions

Oven Method

Preheat the oven to 350°F (175°C).

Place the bread directly on the oven rack or a baking sheet and warm for 5 to 8 minutes.

This method restores the crust beautifully.

Air Fryer Method

Heat at 320°F (160°C) for 3 to 4 minutes until warmed through.

Skillet Method

Place the bread in a dry skillet over medium-low heat.

Warm each side for 1 to 2 minutes.

From Frozen

Allow the bread to thaw at room temperature and then reheat using one of the methods above.
