1.PREPARE THE QUICK DINNER ROLL DOUGH

Into a bowl,lets add all our ingredients together and mix them to form a shaggy mass of dough.

Add the milk, sugar, yeast, egg, salt, butter and flour and mix them together.

I used the rear end of a wooden spoon to mix.

Transfer the dough on to a clean work surface. Knead the dough until the dough become soft and elastic.

This dough is a sticky dough. So you may find it difficult to knead in the beginning.

We may get tempted to add more flour in the beginning of kneading; but don’t do that.Just continue to knead and you will see all those extra moisture will get absorbed and your dough will turn soft, smooth non sticky and elastic.

It will be so much easier if you are using a stand mixer to prepare the dough. In a stand mixer, just knead the dough for 8-10 minutes using the dough hook attachment.

Only a well kneaded dough can produce soft and fluffy dinner rolls .

How should I know my dough is kneaded well?

We can test the doneness of dinner roll dough.

If properly kneaded, the dough should stretch, without tearing or breaking, into a thin membrane that you can see through.

If we are using bread flour it is easy to attain this stage of dough (it may take around 10 minutes of kneading).As bread dough contains more proteins than all purpose flour.

But if we are using all purpose flour,it may take longer to attain this stage of perfection.

Our one hour dinner rolls would still be good and soft even if our dough didn’t pass this window pane test.

But if the dough passes the window pane test ,and they get doubled in size after the final proofing, then it is guaranteed that your dinner rolls will be super soft and fluffy.

2.DIVIDE AND SHAPE THE DOUGH

Once our dinner roll dough is ready, divide the dough into 15 equal pieces.For more precision, I weighed each of them and they were 40-41 g in weight.

Roll each piece of dough into small balls.

Flatten the dough piece.

Tuck in the edges towards the centre.

Flip it upside down. Roll the ball with cupped hand to form small round balls.

Place the rolls into a nonstick baking tray or on to parchment lined baking tray or on to a well greased baking tray.

3.PROOF THE ONE HOUR DINNER ROLL DOUGH

Cover the baking tray with a cling film or using a damp tea towel.

The activity of yeast is more in a warm environment. So we are going to place them in a warm place, so that the yeast cells bloom and grow fast and our dinner rolls will get doubled in size fast.

The best spot to place the baking tray for faster proofing is to place it inside a warm oven (not hot).

How to set the oven for fast proofing of bread dough ?

First turn on the oven onto the lowest temperature.In my oven its is 50 C or 120 F .

Once it reaches 50 C or 120 F, we can turn off the oven.

Now open the oven door and place the baking tray inside the oven and then close the door.

Opening the oven door will lower the heat a bit, and that is fine (we are looking for around 30 C or 85 F).

After 25 minutes of proofing, take the baking tray out.

You will see the rolls have risen really well.

Now start preheating your oven to 180 C or 350 F.

Just before taking the rolls into the oven, brush the top of the rolls with egg wash.This will help to make our rolls shiny and golden brown in color when they are baked.

To make egg wash, lightly beat an egg.

Now they are ready to to go into the oven.

4.BAKE THE ONE HOUR ROLLS

Bake the one hour rolls in a 350 F or 180 C preheated oven for 20-22 minutes.

If the dinner rolls are under-baked, the inside will be doughy and they smell yeasty. So bake sufficiently for 20-22 minutes.

At around 17 minutes the top start to get browned it doesn’t mean that they are done.Wait for the yeast rolls to get baked completely.

Baking Time may vary slightly(2 minutes or so) according to the size of the rolls. If the rolls are smaller, they will get baked in less time and if bigger then it will take longer.

I have also noticed that ceramic pans need slightly longer baking time than metal pans.White pans will take slightly longer to bake than dark pans.

After Baking you will get beautiful golden soft and light dinner rolls.

Brush the top of rolls with some melted butter while they are still warm.

This will make the crust even softer and will add a nice buttery flavor.
