150gChocolate (1 cup) (Milk or Dark), roughly chopped
Instructions
Make the Brownie Bites Batter
Combine Butter and Sugar: Start by pouring the melted butter into a large mixing bowl. Add the sugar and mix until the two are well combined.
Add Eggs: Next, add the eggs, one at a time. Make sure your eggs are at room temperature, as this helps them blend more easily into the batter. Mix well after adding each egg to ensure a consistent texture.
Add Vanilla and Salt: Add the vanilla powder or extract and the salt to the mixture. Whisk everything together until it becomes a pale yellow, which indicates that the ingredients are well incorporated and the batter has a nice, smooth consistency.
Sift Dry Ingredients: Sift the plain flour and cocoa powder into the bowl. Sifting helps remove any lumps and ensures that the dry ingredients are evenly distributed throughout the batter. Fold and mix just until everything is combined. Be careful not to overmix, as this can result in a tougher texture.
Add Chocolate: Finally, stir in the roughly chopped chocolate. You can use milk chocolate, dark chocolate, or a mix of both, depending on your preference. The chocolate pieces will melt slightly during baking, creating delightful pockets of gooey goodness in the finished brownie bites.
Pour the Batter into the Muffin Pan
Prepare the Muffin Tray: Grease the cups of a mini muffin tray with melted butter. This step is crucial to ensure that the brownie bites come out easily after baking. You can also use paper liners if you prefer.
Scoop the Batter: Use a tablespoon size cookie batter scoop or a tablespoon, to scoop the batter into the muffin cups. Aim for about 1 tablespoon of batter per cup. If your muffin cups are larger, you can adjust the amount accordingly. Be sure not to overfill the cups, as the batter will rise slightly during baking.Step 3:
Bake the Brownie Bites
Preheat Oven: Preheat your oven to 350°F (175°C). Proper preheating ensures even baking and the best texture for your brownie bites.
Bake: Place the muffin tray in the preheated oven and bake for around 15 minutes. Keep a close eye on them, as baking times can vary slightly depending on your oven. The brownie bites are done when they have a crackly top and a toothpick inserted into the center comes out with a few moist crumbs.
Be careful not to overbake, as this can lead to dry brownies.
Once your brownie bites are done baking, let them cool in the muffin tray for about 15 minutes(other wise they may crumble). This will help the brownie bites to set and firm up and gain their shape.

Notes
Once your brownie bites are done baking, let them cool in the muffin tray for about 15 minutes (other wise they may crumble). If you find it difficult to remove the brownie bites from the muffin pan, use a toothpick to detach it from the sides of the muffin cups.Remember it's better to slightly underbake the brownie bites to get soft, moist and fudgy brownies than to over bake and get dry brownies.
