Easy rock buns recipe will help you make classic rock buns or rock cakes in a simple and easy method using minimal ingredients.

- 225 g Self-rising flour (1 ¾ cups)
- 100 g Butter (cubed, not too cold)
- 100 g Sugar (½ cup)
- 1/8 tsp Salt A pinch
- 100 g Raisins or dried fruits
- 1 Egg
- 5 ml Vanilla extract 1 tsp
- 45 ml Milk 3 tbsp
Combine flour and butter to bread crumb like consistency
Start by adding the self-raising flour to a large bowl. Then, add the cubed butter (it doesn’t need to be super cold). Using your fingers, rub the butter into the flour until the mixture resembles breadcrumbs. This gives the rock buns their signature crumbly texture.
Add Sugar, Salt and Raisins
Once your flour and butter mixture looks like fine breadcrumbs, add the sugar and a pinch of salt. Mix well to ensure the sweetness and seasoning are evenly distributed.
Stir in the raisins or your chosen dried fruit. This will add little pockets of sweetness and chewy texture to the buns.
Prepare the Wet Ingredients
In a separate small bowl, whisk together the egg, milk, and vanilla extract. This will be your wet mixture that binds the dry ingredients together.
Combine Wet and Dry Ingredients
Pour the wet mixture into the bowl of dry ingredients. Use a spoon gently combine everything.It should not be too wet, nor too dry. You don’t want to over-mix, just combine until the dough comes together.
Bake:
Preheat your oven to 180°C (350°F). Place the tray in the oven and bake for 16-20 minutes, or until the buns are golden brown on the outside.
Once baked, remove the buns from the oven and let them sit on the baking tray itself for 4- 5 minutes.
Then place them on a wire rack to cool down. They’re delicious warm, but equally tasty once cooled.
- Flavor Variations: Feel free to swap out the raisins with other dried fruits like currants, chopped apricots, or even chocolate chips for a modern twist.
- For Extra Crunch: Sprinkle some coarse sugar on top of the buns before baking for added crunch and a touch of sweetness.
