Instructions
Make the Nutella discs.
Line a tray with parchment paper.
Scoop spoonfuls of Nutella onto the tray.Flatten each spoonful into thin discs (about 7cm in diameter).
Freeze for at least 20 minutes. They don’t have to be rock solid, but they should be firm enough to handle without melting.
Make the pancake batter.
In a medium bowl, crack in the eggs. Add sugar and whisk until the sugar is almost dissolved.
Mix in the salt, vanilla, olive oil (or melted butter), and milk.
Sift in the “flour and baking powder”. Gently mix until no dry flour remains.
Cook the Nutella pancake.
Heat a nonstick pan on low heat. Add a little butter and spread it evenly with a paper towel and remove any excess oil or butter.
Pour a spoonful of batter into the pan and gently spread it. Cover with a lid and cook for about 20 seconds.
Place one Nutella disc in the center.
Cover with more pancake batter, just enough to seal the Nutella inside.
Cover the pan again.
Cook until edges are set and you see small bubbles form inside. This may take around 3-3.5 minutes.
Flip carefully and again cover and cook for another minute or so until golden brown
Serve
Stack the Nutella pancakes and top with fresh, juicy berries. A scoop of vanilla ice cream or a dollop of whipped cream takes them from breakfast to an indulgent dessert.Enjoy!

Take care not to over mix the batter.
Sift the flour and add to make the batter; this will help the batter to be more airy.
Keep the heat low and cook slowly to allow the pancake to cook evenly. It will take around 3-3.5 minutes for this thick Nutella pancake( in a low medium heat ) to get cooked on the first side and then around 1-1.5 minutes for the other side to get cooked properly.
As you keep cooking, the pan naturally gets hotter. This means later batches may cook faster and need a little less time. Keep an eye on your pancakes and, if necessary, lower the heat slightly to ensure they cook through evenly without over browning.
Before flipping, ensure the edges are cooked and the center is bubbly. If the sides are too soft, the pancake can fall apart and the chocolate filling may leak out.
Lightly grease the pan and then wipe off any excess with a paper towel before adding the batter. This helps your pancakes turn a beautiful, even golden brown.
