For the Blueberry Filling
- 600 g Blueberries (fresh or frozen) approximately :4 cups
- 75 g Sugar (6 tbsp)
- 2 g Lemon zest (1 tsp) zest of 1 lemon
For the Batter
- 162 g Flour (1 1/4 cup)
- 8 g Baking powder (2 tsp)
- 150 g Sugar (3/4 cup)
- 236 ml Milk (1 cup)
- 1.5 g Salt (¼ tsp)
Prepare the Blueberries
While the butter melts, take a bowl and add:Blueberries, sugar and lemon zest.Mix everything together. Carefully remove the baking tray from the oven once the butter has melted.Add the blueberry mixture evenly over the melted butter.
Make the Batter
In another bowl, mix together:Flour, Sugar, Baking powder and salt. Add Milk.Mix until just combined. Do not overmix. A few small lumps are perfectly fine.
Assemble the Cobbler
Pour the batter over the blueberry mixture.Do not stir.
