Prepare the Dough

  • In a large bowl, mix the flour, water, salt, and yeast until no dry flour remains.
  • Cover the bowl and let the dough rest for 1 hour.

Add the Olives

  • Add the chopped olives to the dough.
  • Perform one round of stretch and folds to evenly distribute the olives.
  • Cover and let the dough rest for 30 minutes.

Divide and Reshape the Dough

  • Transfer the dough to a lightly floured surface and divide it into 2 equal pieces.
  • Gently pre-shape each piece into a rough log.
  • Cover and let the dough rest for 30 minutes.

Shape the Baguettes

  • Twist and Shape each piece into a baguette.
  • Transfer to a baguette pan or a preheated baking tray.

Bake the Olive Baguettes

  • Preheat the oven to 425°F (220°C).
  • Spray water inside the oven to create steam and immediately place the baguettes inside.
  • Bake for 30 minutes or until deep golden brown.
  • Cool on a wire rack before slicing and serving.
