Ingredients :Banana Chocolate Chip Muffins
- 3 medium sized very ripe bananas, or 1 and 1/2 cups mashed bananas
- 2 eggs
- 6 tbsp (85 g) of melted butter or oil
- 1/4 cup (50g) of brown sugar (If you don’t want to use brown sugar, you can use white sugar instead)
- 1/3 cup (66g) white sugar *I find this is enough sugar if adding the chocolate chips but if you add nuts in place of chocolate chips, I would suggest you to increase it to 3/4 cup (150g)
- 1/4 cup yogurt(65g)
- 1 tsp (5 ml) vanilla extract or vanilla powder
- 2 cups (260 g) of plain flour or all purpose flour
- 1/8 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 cup (175g) semi sweet or milk chocolate chips
NOTE: I didn’t add too much sugar to this chocolate chip banana muffins recipe since banana is naturally rich in fructose and there’s 1 cup chocolate chip in the recipe, if you like really sweet muffins, add a few more tablespoons of sugar to the mixture.
How to make Banana Chocolate Chip Muffins with yogurt
In to a medium bowl, add in all the ingredients and mix them together to form a batter.
1.Combine all the wet ingredients.
Mash the bananas using a fork or a potato masher.Make sure there are no big chunks of banana.
Add the eggs ,sugar, oil, yogurt and vanilla extract (if using vanilla extract).
Combine all of these ingredients to form a homogenous mixture.
2.Prepare the flour mix
Into the flour, add in the baking powder, baking soda, vanilla powder and salt .Mix everything together so that all the ingredients gets evenly distributed in the flour.
3.Mix together the wet and dry ingredients.
Add in the chocolate chips and mix together.
While preparing the banana muffin batter,we should keep in our mind that, if we over mix the batter after adding the flour, it may cause development of gluten strands which can result in tough and rubbery banana muffins.
So use the minimum folds and strokes to mix them together.
when the proportion of leavening agents in the recipe is exact and if the folding method is gentle, then our banana muffins will always be soft, light and fluffy.
4.Transfer the batter onto the muffin tray
Spoon the batter into liners, filling them almost near the top.
5.Bake the chocolate chip banana muffins
Place this muffin tray into a 400F preheated oven.
Bake for 5 minutes at 400 F then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C).
Bake for an additional 16-18 minutes or until a toothpick inserted in the center comes out clean.
The total time these muffins take in the oven is about 21-23 minutes.
For mini muffins, bake 12-14 total minutes at 350°F (177°C).
Allow the muffins to cool for 3 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
Why is it better to bake muffins with a higher temperature in the initial few minutes?
The higher temperature in the beginning of baking will help to give a nice “oven spring” which will cause the top of muffins to form the dome shape and then the inside of the muffin can bake slowly with a lower temperature.This helps the muffins rise nice and tall.
