Ramazan Pidesi is a special soft Turkish flatbread made traditionally during Ramadan or Ramazan.
This Turkish pide bread is shaped round and rather flat in form, and having a weave-like patterned crust, usually shaped with hands .
Ramazan pidesi is traditionally topped with sesame and nigella seeds.
It is traditionally served for the iftar and sahur meals during the holy month of Ramadan.
Bakeries all over Turkey provide this Ramazan flatbread, hot and fresh about an hour before evening prayer.

Ramadan Pide :Ingredients
- Flour :390 g or 3 cups loosely packed
- Water :312 ml or 1 and 1/4 cup+1 tbsp
- Salt :1 tsp or 6g
- Sugar :1 tbsp or 12.5 g
- Yeast :1 and 1/2 tsp or 4.5g (If using Active Dry yeast use 2 tsp)
How to make Ramazan pide
We are making this Turkish flatbread in five simple steps
- Prepare the dough
- First Proofing (30 minutes)
- Divide and shape the pide bread
- Final rising (25 minutes)
- Bake the Ramazan Pide bread (200 C or 400 F for around 20 minutes in the lower rack)
1.Prepare the dough
In this Turkey Bread Recipe we are making the bread dough in a very simple and easy method.
Pour in the lukewarm water in to a bowl.
Then add the sugar,salt and yeast.
Stir and Mix until the ingredients dissolve.
Add the flour and combine them all together to form a shaggy mass of dough.
Make sure there are no dry patches left behind.
2.Proof the dough
Now cover the dough and let it rise for 30 minutes.
3.Divide and shape the dough
After 30 minutes, pull and stretch the dough from all four sides.Dip your hands in water to prevent any chance of dough sticking to your hands.
Divide the dough into two equal halves.
Shape each of them into round balls and keep it covered for 5 minutes.
This will give some time for the gluten strands to relax.
It will prevent the tendancy to rebound back while we shape the dough.
After five minutes, flatten the dough ball to form a flat round disc of approximately 22 cm in diameter and 1 and 1/2 cm in thickness.
Transfer the disc onto a parchment lined baking tray.
4.Final Rising
Cover the tray with a greased plastic film.
This will prevent the plastic film from sticking to the flat dough.
Now rest for 25 minutes or until they puff up and rise.
After 25 minutes, brush the top with egg wash.
Withe finger tips, make dots or indentations with a diamond pattern on dough discs leaving an inch of space from the edge of circle.
Now sprinkle the top with a mix of sesame seeds and nigella seeds.
Now they are ready to go into the oven.
5.Bake the Turkish pide bread
Bake the Ramadan Pide bread at 200 C or 400 F for around 20 minutes in the lower rack of the oven.
After baking you will get Golden brown, soft and beautiful Turkish bread or Ramazan pide.
How to serve Turkish pide bread
Turkish pide Bread can be served in a variety of ways.
We can either have them with kebab or can dip it in Baba Ghanoush or have with any of your favorite soups or salads.
Can I make this Turkish Pide ahead of time
Yes you can make this Turkish pide bread ahead of time.
You can keep this Pide bread dough in fridge after the first proofing .I prefer to do the stretching and folding as well before keeping it in fridge.
When you want to bake the Ramazan Pidesi,Take the dough outside and let it sit at room temperature for 30 minutes or until it comes to room temperature.
When it reaches room temperature, you can proceed with the rest of the steps ,starting with the third step of dividing and shaping the dough.
How do you reheat Turkish pide bread
To reheat pide bread before eating; just sprinkle them with water and place in a hot oven (180 C/ 350 F) for around 8 few minutes or until they are warm.
