Chocolate Chip Shortbreads in Two Easy Steps

These delicious chocolate chip shortbread finger biscuits are tender,soft and crumbly and so easy to make it at home.

Its a super  recipe because it’s so easy to throw together — one bowl, very little mess,No hard to find ingredient required; no special equipments required and we can make them in less than one hour.

Chocolate chip shortbread finger biscuits can be prepared in two simple steps.

Ingredients:

  • Sugar:75 g
  • Butter:150 g
  • Flour:225 g
  • Chocolate chips:According to your preference (1/2 cup -1cup)
  • A pinch of salt

The secret for making perfect shortbread is the ratio in which Sugar, Butter and Flour are combined.It should be in the ration 1:2:3Chocolate chip Shortbread

That is if we are taking 100g of sugar,we will need 200g butter and 300g flour.

Method

Step 1

Mix together all the ingredients;for the proper blending of all the ingredients,we are mixing together the butter and sugar first and then adding the flour into which a pinch of salt is added and whisked to make sure the salt is evenly distributed in the flour.Chocolate chip Shortbread

then add the chocolate chips or chopped chocolateChocolate chip Shortbread and transfer on to a baking tray lined with parchment paper and smooth out the surface.

Size of my baking tray is 18 cmx 28 cm or 7 in x 11in

Prick the surface of the dough with the tines of fork so that steam can pass easily and the it will not bubble or puff while baking.Chocolate chip Shortbread

Step 2

Bake at 320 F for 40-45 minutes.

TIP: You can see just the very edges of the shortbread are golden, don’t make the mistake of over baking it, it will still be pale on top when it is done.

Cut them into rectangles or squares when they are still warm and let it cool down completely in the tray itself.Be careful, the shortbread will be delicate until it has fully cooled.Chocolate chip Shortbread

What is the difference between a shortbread,a cookie and a cake ?

The main difference between shortbread and cookies, or cake, is its texture.  Where cookies are crunchy or chewy, shortbread is buttery tender and soft.  Where cakes are airy and spongy, shortbread is dense and melting.  There is no leavening in the dough, so it doesn’t rise, it just puffs up a bit.

What kind of sugar is to be used to prepare a perfect chocolate chip shortbread?

As said earlier,Shortbread has an easy way to remember the ingredients – a ‘1, 2, 3’ rule. One part sugar to two parts butter to three parts flour. For shortbread you really do need to use good quality ingredients. You can use either caster sugar,powdered sugar, granulated sugar or brown sugar each changes the taste or texture a little, I prefer granulated sugar for my plain shortbread.

  • While Mixing Ingredients

The ingredients for shortbread are simple: butter, sugar, salt and flour. The key to making shortbread that holds together and also has a wonderful, flaky texture, is the temperature of the butter. It must be cool or cold, not softened or melted. Much like pastry crust, shortbread benefits greatly from butter that is chilled, grated or cut into small pieces, and quickly mixed into the dry ingredients. Over-mixing will leave the dough tough, and the baked product will lack flakiness. For best results, use European butter  that have a slightly higher percentage of fat than other butters.

  • While Forming the Cookies

Whether you choose to roll out the dough and cut out the shortbread for cookies or make them into bars, it’s important to avoid over handling the dough. For cut-out cookies, pat the dough lightly down instead of rolling it flat. Similarly for bars, lightly pat the dough into the prepared pan before putting it in the oven. The dough should have the consistency of pie crust. One last trick is to put the cookies or the unbaked bars back in the refrigerator for at least 15 minutes before baking. This will help create the distinctive crunchy texture that’s desirable in shortbread.

When it is around 42-44 minutes of baking,You can see just the very edges of the shortbread turn golden, at this point, please  don’t over bake it, it will still be pale on top when it is done.
