Chocolate Buns Recipe : Soft and Fluffy Chocobuns

Chocolate Buns Recipe will help you make super soft and fluffy chocolate rolls in four simple steps.

We need only seven basic ingredients to make this chocolate filled buns.

The chocolate buns are pillowy soft and cotton light…they are super delicious.

In this chocolate filled buns recipe, we are not doing double proofing and so it saves our time and makes the process much easier.

I am so happy to share this quick and easy method of making awesome chocolate bun.

Chocolate buns

INGREDIENTS NEEDED TO MAKE CHOCOLATE BUNS

For chocolate buns dough

  1. Flour :325 g (2 1/2 cups)
  2. Slightly warm water or milk (not hot) :195-210 ml (3/4 cup +1 -2 tbsp)
  3. Butter :42.6 g (3 tbsp)
  4. Yeast :1 and 1/2 tsp
  5. Sugar :2 1/2 tbsp (30g)
  6. Salt:1 tsp (6g)
  7. Chocolate spread as required

For the chocolate swirls

  1. Flour :2 tbsp(15-16 g)
  2. cocoa powder :1 tsp(2.5 g)
  3. Sugar :1 tsp(4.5 g)
  4. Water :1-2 tbsp (20-30 ml)to make a thick paste

HOW TO MAKE CHOCOLATE FILLED DINNER ROLLS

We can make chocobun in 5 simple steps.

1.Prepare the dough

2.Divide and shape the dough

3.Proof the shaped dough :1.20 hour or around 80 minutes

4.Bake the dinner rolls

1.PREPARE THE CHOCOLATE BREAD ROLL DOUGH

Into a bowl,lets add all our ingredients together and mix them to form a shaggy mass of dough.

Add the milk, sugar, yeast, salt ,butter and flour and mix them together.

Transfer the dough onto a clean work surface and knead the dough until the dough become soft and elastic.

Only a well kneaded dough can produce soft and fluffy dinner rolls .

The dough will be wet and so we may find it difficult to knead just as we knead a bread dough in the beginning.

Slapping the dough on the work surface and then folding the dough and repeating he same motion will help you develop the gluten strands.

The extra moisture will be absorbed by the dough in about 10 minutes and the dough will be smooth and elastic at about 15 minutes of kneading.

How should I know my dough is kneaded well?

We can test the doneness of dinner roll dough :If properly kneaded, the dough should stretch, without tearing or breaking, into a thin membrane that you can see through.

If we are using bread flour it is easy to attain this stage of dough(it may take around 10 minutes of kneading);As bread dough contains more proteins than all purpose flour.

But if we are using all purpose flour,it may take longer to attain this stage of perfection.

Our bread would still be good and soft even if our dough didn’t pass this window pane test.But if the dough passes the window pane test ,and the one hour proofing,then it is guaranteed that your bread will be super soft and fluffy.

It will be so much easier if you are using a stand mixer to prepare the dough.In a stand mixer,just knead the dough for 8-10 minutes using the dough hook attachment.

2.DIVIDE AND SHAPE THE DOUGH

Now, divide the dough into 15 equal pieces.For more precision,I weighed each of them and they were 38-40 g in weight.

Roll each piece of dough into small balls.Tuck in the edges towards the centre and roll the balls into small round balls.

Then take each dough ball and then press and shape it into thin circular sheet .

It is better to keep the center part thicker.Otherwise the dough layer on top will be thin and the chocolate will ooze out while baking.

Place some chocolate spread or nutella in the center of the circle.

Tuck in the edges and pinch together to form round balls

Place the rolls on a nonstick baking tray or on to parchment lined baking tray or on to a well greased baking tray.

Do I need to chill the chocolate spread before using it as chocolate bun filling

I have tried using the chilled chocolate spread and chocolate spread kept at room temperature.

I didn’t find any difference when it is baked.

The one convenience while using chilled chocolate spread is that it will make the process easy and clean while shaping the bread rolls.

When I used chilled chocolate spread, it took longer time to proof the chocolate buns.The action of yeast will be slow and retarded when it is in a cold environment.

So If your place is cold and not very hot, we don’t need to keep the chocolate spread in refrigerator.But if your place is hot, you may find it difficult to roll and shape the bread dough .In that case, you can keep the chocolate spread in fridge and then use it for filling.

Can I use baking chocolate instead of chocolate spread for the chocolate bun filling

Yes you can use.I have tried chocolate chips as well.

3.PROOF THE NUTELLA ROLLS DOUGH

Let the dough ball sit in a warm environment for about 80 minutes or until they puff up and get doubled in size.

After proofing at around 80-90 minutes ,brush the top of those rolls with an egg wash to make our rolls shiny and golden brown in colour when they are baked.

And Optionally make some chocolate swirls on top of the proofed dough.

HOW TO MAKE THE CHOCOLATE PASTE FOR SWIRLS

Into a bowl add some flour ,sugar, cocoa powder.

Add enough water to make a thick but runny batter.

Transfer the chocolate batter onto a piping bag.

Make swirls on top of the buns.

This give beautiful chocolate swirl pattern on top the buns.

Now they are ready to to go into the oven.

4. BAKE THE CHOCOLATE BREAD ROLLS

Bake the rolls in a 375 F preheated oven for 18-20 minutes.

How to prevent the top of chocolate dinner rolls from over browning ?

  1. Place an aluminum foil on top to prevent over browning,whenever you feel so
  2. You can place the baking tray way from the heating coils to prevent this issue..(I placed my baking tray in the lowest rack of the oven as the heating coils were on the upside)

If the nutella filled dinner rolls are under baked, the inside will be doughy and they smell yeasty.So bake sufficiently for 17-20 minutes.

CAN I ADD EGG IN THIS NUTELLA ROLLS RECIPE?

Yes you can add egg in this hazelnut rolls if you want to.

As one egg is approximately 45 ml,just reduce 45 ml ( 3 tablespoon) of milk while you add an egg.

HOW TO STORE NUTELLA BUNS?

Once the rolls are completely cooled,place the stuffed rolls in a plastic storage bag, or wrap in foil and store at room temperature.

Properly stored,these sweet dinner rolls will last for about 3-4 days at normal room temperature.

In extremely warm, humid temperatures,the chocolate buns should be frozen for longer-term storage.

For freezing: Place the buns in a heavy-duty freezer bag or wrap the buns tightly with aluminum foil or plastic freezer wrap and freeze.

Properly stored, they will maintain best quality for about 3 months.

For Chocolate buns dough

  • 325 g Flour (2 1/2 cups) loosely packed
  • 195-210 ml Slightly warm water or milk (not hot) (3/4 cup +1 -2 tbsp)
  • 42.6 g Butter (3 tbsp)
  • 1 and 1/2 tsp Yeast if using active dry yeast use 2 tsp
  • 30 g Sugar 2 1/2 tbsp
  • 1 tsp Salt (6g)
  • Chocolate spread as required

For the chocolate swirls

  • 2 tbsp Flour 16-17 g
  • 1 tsp Cocoa powder 2.5 g
  • 1 tsp Sugar 4.5 g
  • 20-30 ml Water 1-2 tbsp to make a thick paste

Hi Bincy,

I really like this recipe! Love your videos! I put Ghirardelli chocolate sea salt caramel in the middle buns and it's delicious! Also, I have used this recipe for my coconut buns and pork buns as well. Both of them came out wonderful and delicious!! You are very talent in your baking. Your ciabatta bread was my 1st recipe and then I was hooked! LOL Thank you! God bless you!
