Date Cookie Recipe for making the best soft, chewy, buttery Date cookies that are pretty easy to make.This Date Cookies are deliciously flavored with vanilla and coffee flavors.

DATE COOKIES INGREDIENTS
- Flour :130 g or 1 cup loosely packed
- Sugar :100 g or 1/2 cup(we can use white sugar or brown sugar or a mix of both.Here I used 1:1)
- Butter 75 g or 1/3 cup
- Egg:1
- Vanilla extract :1/2 tsp
- Coffee Powder:1/2 tsp
- Baking Powder :1/2 tsp
- Salt :1/8 tsp
- Chopped dates : 110-115 g or 1/2 cup
HOW TO MAKE DATE COOKIES
This Date cookie recipe using chopped dates can be made in a very simple method ,just like how we make a chocolate chip cookies.
Cream the butter and sugar.
I have used a whisk to cream them together
Add egg ,vanilla extract and coffee powder and mix until if forms a thick and uniform mixture.
Add the flour, baking powder and salt.
Now for convenience,I switched from using a whisk on to a spatula.
Combine them all together.Take care not to overmix the batter.
And just when the batter come together, add the chopped dates and mix to form a homogenous date cookie dough.
Once the dough is ready,take small portions (1 tablespoon scoop dough) using a spoon or an ice-cream scoop and place it onto the baking tray lined with a parchment paper or onto a non stick baking tray.
Leave a little room(1 inch space) between each ball of date cookie dough, as they will spread a little while bake.
Bake at 350F preheated oven for 16-18 minutes.
HOW LONG TO BAKE DATE COOKIES
Bake at 350°F for 16-18 minutes or until the edges of the cookies are lightly golden brown and the top is set.
Baking temperature may vary according to the size of the cookie dough.The bigger the size the longer they will take to get baked.
Note that the cookies will seem underdone. That’s okay, they will firm up as they cool.
Remove from the oven and cool on the baking sheet for 3-4 minutes, then transfer the cookies to a wire rack to finish cooling.
They will be quite soft until completely cooled
HOW TO STORE THIS COOKIES MADE WITH DATES
You can store this Date Cookies on the counter in an airtight container for up to 3-4 days.
CAN YOU FREEZE BAKED DATE COOKIES
Baked Date Cookies will last in an airtight container in the deep freezer for 3 months.
CAN YOU FREEZE DATE COOKIE DOUGH
You can freeze this Date cookies dough… I actually love doing this because you can have freshly baked cookies in minutes. I suggest dropping by spoonfuls on a parchment lined pan and freeze. Once frozen, transfer to a freezer bag or container.
To bake from frozen, simply take out as many as you need and allow cookies to sit at room temperature for about a few minutes prior to baking.
